Ketchup fried rice is a gourmet way to enjoy the flavors of our childhood!

ABOUT KETCHUP FRIED RICE

Growing up, I was a ketchup fiend. I still kinda am, but back then I would just straight up eat ketchup mixed into rice. My grandma would often prepare me rice and some protein and I would just mix it all together with rice. Absolutely lawless. I like to think of this as a more grown up and refined version of that chaos! Additionally, though, this is quite similar to the filling of omurice. Ketchup fried rice is made by seasoning ketchup and cooking it down which deepens the acidity and flavor and then frying rice and mixing in the sauce. It’s quite simple to make and the ingredients are relatively cheap. You can dress it up or down as you like, making this a great dish to add to your meal rotations.

  • ☆ Ketchup
  • ☆ Chicken bouillon
    • Bouillon adds more savory flavor to the ketchup sauce. If you don’t eat meat, you can use mushroom or vegetable bouillon.
  • ☆ Parmesan cheese
    • Parmesan also adds a savory and umami flavor to the sauce. 
  • ☆ Rice
    • Cold, day old rice is best, but if you have freshly cooked rice, you can spread it lightly onto a plate to let it dry out a bit.
  • ☆ Vegetables
    • I used onion, corn, and peas which are common in fried rice. You can also add carrot, which is also a popular choice. 
  • ☆ Butter
    • Frying the rice in butter rather than regular oil gives this dish a nice richness that goes well with the sweet acidity of the ketchup. Of course, you can use cooking oils such as olive or vegetable as well.

Ingredients
  

Ketchup Sauce Ingredients

  • 100 g ketchup
  • 2 cloves garlic minced
  • 1 teaspoon chicken bouillon
  • ½ teaspoon worcestershire
  • ½ teaspoon granulated sugar
  • ½ teaspoon parmesan cheese powder
  • Salt and pepper to taste

Ketchup Rice Ingredients

  • 7 g butter
  • ¼ onion diced
  • 30 g peas
  • 30 g corn
  • 500 g rice

Instructions
 

  • First, prepare the ketchup sauce. Combine the ketchup, garlic, chicken bouillon, worcestershire, sugar, and parmesan in a small pan and cook over medium heat until the sauce is reduced and slightly thick. Season with salt and pepper to taste. Once the sauce is thick enough to draw a line through and darker in color, it’s ready. Set aside while we fry the rice.
  • In a medium sized frying pan, melt the butter then add the onion and cook until it becomes transparent. If you’d like to add meat, this is the time to add it and cook before continuing the recipe.
  • Next, add corn and peas. Typically I use frozen peas, so cook until they are slightly cooked and tender.
  • Then add the rice and stir fry with the vegetables, cutting through the rice to break any large clumps and evenly distribute the vegetables. Once the rice is fried, create a well in the middle and add all of the ketchup sauce we made earlier.
  • Fry the ketchup sauce and rice as you mix it together. Use the same method as the previous step to ensure the sauce is thoroughly incorporated. Continue to stir fry until the rice is moist but not wet and fully incorporated with the sauce and the ketchup fried rice is done! 完成です!
